Holy Goat Veloute

Holy Goat Veloute

When I was researching this post, I already had expectations about the superiority of goat’s milk over cow’s milk. I was pleasantly surprised to find that what I found exceeded expectations.

From a scientific standpoint, goats milk is high in calcium, B2, Vitamin D, dietary fourine and potassium. Read: better bones, soft and supple arteries, increased energy production, boosted immunity and dental health. Read: alkalising. Pick up any plant based food book and you’ll find that cow’s milk is acid forming when metabolised. On the other hand, it contains much less Alpha S1 caesein. This the stuff in cow’s milk that causes mild to severe allergic reactions, especially in kids. Symptoms are anything from ear infections, asthma, eczema and skin rashes, rheumatoid arthritis, vomiting and diarrhoea. While only a 10% less lactose than cow’s milk, studies show that goat’s milk is more tolerated. I reckon this would have something to do with it’s digestive promoting function. Goats milk enriches gut flora and being naturally homogenised it is much easier for the body to digest.

TCM views goats milk as an excellent nutritional supplement. Normally, milk and cheese made from a cow is damp forming. Goats milk doesn’t contribute to damp which is the TCM equivalent to potty gut syndrome, pain, tumours, cysts, parasites, candida, poor digestion. It’s really hard stuff to move and loads of factors contribute to it. More on that later.

The way I look at is, cows milk is designed for a 45kg calf with very fast and large growth. A goats size and growth rate is similar to that of a human (interesting how baby goats are called kids too). Slightly sweet with salty undertones and pleasantly creamy, no wonder 65% of the world’s population choose the goat. Here I’ve been enjoying an organic goat’s veloute from Holy Goat. Enjoy at room temperature with roasted beetroot and fresh mint.
